Ingredients:

3 or more large, ripe tomatoes
1 cucumber (peeled is optional)
1 clove garlic, pressed or minced
½ cup chopped fresh parsley
6 leaves of fresh basil, minced
2 Tbsp. balsamic vinegar
2 Tbsp. white, cider or red wine vinegar
2 Tbsp. olive oil
salt and pepper to taste
½ small loaf of crusty bread, cubed (from baguette, sourdough, or French/Italian loaf; this recipe is a great way to use older bread!)

Optional: fresh mozzarella

Preparation:

If bread is fresh, spread the bread cubes on a cookie sheet and toast in the oven on 300F for 10-15 minutes to dry them out.

Chop tomatoes and cucumber up; place in salad bowl with parsley and basil.

In a small bowl, whisk together the oil, vinegars, and minced garlic with a dash of salt and pepper to make a light dressing.

Add bread cubes (and fresh mozzarella slices, if desired) to the tomato-cucumber bowl and pour dressing over everything. Toss thoroughly
