Recipe: Tomatoes and Zucchini - A Match Made in the Garden

It’s summertime and that means that fresh, delicious tomatoes and zucchini can both be found in abundance in either your own garden or local market.
Here’s a great, easy way to put them together while retaining both of their unique flavors.
Linguine with Tomatoes, Zucchini, and Grilled Shrimp
- 1/2 pound fresh medium shrimp, peeled
- Salt and pepper to taste
- 4 tablespoons olive oil
- 2 cloves garlic, crushed
- 1/2 pound green zucchini, julienned
- 4 medium ripe tomatoes, chopped (with juice!)
- linguine
First put on water to boil for the pasta.
In a bowl, mix together shrimp, salt, pepper, and about a tablespoon of oil.
Grill shrimp over high heat for about a minute on each side until they are slightly charred but not chewy.
Heat the rest of the olive oil over medium heat, add garlic and sauté for a minute or two. Add zucchini and sauté until tender, about 3-4 minutes.
Add tomatoes and their juice and let simmer, adding salt and pepper if needed. Also, if you see that the mix is getting too dry, add a bit of water.
When you like the flavor of the tomatoes, add the shrimp and let everything cook together for a minute or so—again, not too long because you don’t want the shrimp to be overcooked.
In the meantime, boil and drain the pasta when it is al dente and then combine well with sauce.
Note that if you don’t like shrimp, you can just leave it out and still have a great summer meal.

Ah, I should also note–add a bit of peperoncino (chile pepper) to give all the flavors a kick!

Karina, hmm, is bread the problem? If so, why not make this as a salad? Do the shrimp and zucchini the same way but then throw in fresh tomatoes. I’d add a little basil, oregano, or parsley and there you go

I made your recipe from http://www.tomatocasual.com last night and IT WAS WONDERFUL! It is a very simple dish and perfect for the heat wave that we are experiencing here. (heat index 110) Kraft cheese has a new product of Italian Crumbles, I sprinkled that on top and was in pasta heaven baby! I will make it again in a few days!! Besos Jannis
