The Italian standard is delicious and needs no improvement, but the marriage of the Latin/Central American tomato salad with the Italian garlic toast is a good pairing!

What’s not to like?

This recipe also helps to use other herbs and peppers you may have in the garden.

Ingredients
2 large or 4 small tomatoes, sliced into thin wedges
2 Tbsp. cilantro (fresh), well-cleaned and chopped (no stems)
One onion, halved and sliced very thin
2 Tbsp balsamic vinegar (may substitute preferred vinegar for different flavor)
Garlic clove
Crusty loaf of bread (sourdough, Italian or artisanal country bread all work well)
Salt, pepper, olive oil for drizzling
Optional: 1 mild chili

To Prepare
· Slice the bread thinly and toast until very firm (preferably on grill, but also good just in the oven).
· While the bread is toasting, add the chopped cilantro and the onion slices and fresh chili (if desired) to the tomato wedges. Pour the vinegar over everything and gently toss. Salt and pepper to taste.
· When the toasts are dry and crisp, remove from grill/oven and rub lightly with peeled garlic clove. A little bit goes a long way.
· Drizzle toasts lightly with olive oil.
· Spoon the tomato salad over the oiled garlic toasts, and enjoy.
