Cherry Tomato Compote Wins You Say Tomato Recipe Contest

Lakeisha Germany-Ross, a 17-year-old 11th grader at Connections High School in Panaewa, Hawaii, won first prize in Hamakua Springs Country Farm’s You Say Tomato Recipe Contest for Hawaii Community College students.

The winning dish?

Cherry tomato compote served over a mascarpone, cream cheese, and citrus zest budino (pudding in Italian).

Germany-Ross cooked cherry and beefsteak tomatoes slowly in a sugar syrup, having modified a recipe that she found while looking through books for inspiration.

Hamakua Springs Country Farm is a family business specializing in growing bananas, lettuce, cucumbers, and, of course, tomatoes.

Germany-Ross’s recipe was up against more than 50 other recipes in three categories: soups and bisques, entrées, and preserves and condiments; her recipe also came in first in the preserves and condiments category based on visual appearance, taste, originality and best use of tomatoes.

For her impressive recipe, Germany-Ross won round-trip airfare for two to Honolulu and dinner at Alan Wong’s restaurant.
