Recipe: Tomato Sherbet you Say?

Yes, tomato sherbet.

This is a great recipe for those of you with that sweet tooth and an eye for decoration and is one of my favourite things to use up any extra tomatoes lying around.

It’s very easy to make and can be stored for a long time, I use it to decorate plates and canapés for any parties I throw, but it can be used for any number of things, especially for impressing your friends with a funky new style to your cooking.

Ingredients:

• Tomatoes (the quantity or type doesn’t matter)
• Sugar
• Thyme
• Olive oil

Method:

1. Thinly slice any tomatoes you have and place them onto a baking tray lined with greaseproof paper.
2. Sprinkle with a little sugar, salt and pepper.
3. Then drizzle with olive oil and sprinkle with finely chopped thyme.
4. Leave in a warm place, such as above or near the oven, until all the moister has gone from the tomatoes and they are dry.
5. Try to turn the tomato slices over every now and then, as this will help them to dry quicker.
6. Once fully dried, peel the tomatoes from the tray and blitz them in a blender with an equal amount of sugar until it turns into a powder.
7. And that’s it. You now have tomato sherbet which you can use to decorate your plates and canapés or just to show off to your friends.

    I use this recipe with loads of different fruits such as strawberry’s and figs but the tomato one is amazing.
