Recipe: Slow Cooked Tomatoes

A great way to add something to those otherwise boring salads, dressings and sauces or anything else you might think needs a little more taste in it, once again this is another quick and easy recipe that you can prepare at home.

Ingredients:
• 3 tbsp extra virgin olive oil
• sea salt and pepper
• 3 cloves Garlic, finely sliced
• 10 basil leaves
• 4 sprigs Thyme, leaves only
• 2 Bay leaves
• 16 plum tomatoes, peeled
• 1 tsp Sugar

Method:
1. Preheat the oven to 260.F and Line a baking tray with foil and drizzle 2 tablespoons of olive oil evenly over.
2. Sprinkle the oil with salt, pepper and half of the garlic.
3. Scatter over the basil, thyme, and bay leaves.
4. Cut each tomato lengthwise in half and carefully, with your fingers or a teaspoon, remove the seeds.
5. Lay the tomato halves cut side down on the foil, and drizzle a little more oil over.
6. Season the tops of the tomatoes with salt, pepper and a little sugar, and sprinkle over the rest of the garlic.
7. Bake for about 1 hour or until they are very tender but still retain their shape.
8. Turn the tomatoes over halfway through to help then cook evenly.
9. When the tomatoes are cool you can use them straight away or pour olive oil over the tomatoes and store for up to 2 - 3 days in the fridge.
