Recipe: Tomato Risotto

A perfect dish that can be made all year round, with so many different combinations and flavors possible it’s a popular choice for most dinners, try out this tomato risotto and tell us how you get on.

Ingredients:
• 5 oz risotto rice
• 2 oz tomato juice
• 2 oz sun dried tomatoes
• 1 tbsp tomato purée
• 2 oz chicken or vegetable stock
• ½ onion
• 1 clove garlic
• 3 tbsp white wine
• 1oz unsalted butter
• 1 tbsp fresh basil leaves

Method:
1. Finely chop the onion and garlic and place into a sauce pan with the butter.
2. Gently allow to cook until the onion becomes soft then add the risotto rice.
3. After a few more minutes add the purée, white wine and tomato juice then bring to the boil.
4. Reduce the heat and simmer gently for 5-6 minutes.
5. Pour a small amount of stock if necessary to prevent the rice from drying out, and continue to simmer for a further eight minutes or until the rice is tender.
6. Remove from the heat and stir in the freshly chopped basil and dried tomatoes.
7. Ladle into serving dishes and serve.
