Recipe: White Tomato Sorbet

With this recipe you can literally make a white tomato sorbet out of red tomatoes.

There’s no cheating involved either, all you need is a juicer and some tomatoes (obviously).

Its best used with cherry tomatoes but you can use others if you wanted (it’s just makes it a little pinker). It’s great for those summer dishes and goes extremely well with shellfish like shrimp or crab.

Ingredients:
• 2lbs cherry tomatoes
• 1 cup water
• 5 oz sugar
• 2 gelatine leaves

Method:
1. Wash the cherry tomatoes and place them whole through a juicing machine, collecting the liquid in a pan.
2. Heat the tomato liquid and then as soon as it’s about to boil take it off the heat and pass it through a sieve or cloth. (do not let it boil)
3. Soak the gelatine leaves in cold water till soft then drain the water out.
4. Boil the sugar and water together then pour over the soft gelatine leaves.
5. Mix the sugar water with the clear tomato liquid.
6. Allow the mixture to cool slightly then place into an ice cream machine till hard.
7. If you do not have an ice cream machine then just simply place the mixture in the freezer stirring every hour till its set.
