Recipe: Nicoise Salad

The Nicoise salad - so simple but yet so tasty.
And what better way to eat a nice and healthy salad than go for one with the works.
You can eat it by itself or serve it with a lovely piece of fish such tuna, salmon or bass. Try putting some hot chicken and bacon pieces through as well (not as healthy but just as mouth watering).
Ingredients:
• 2 boiled eggs
• 2 cooked new potatoes
• 10 cherry tomatoes
• 20 pitted olives (black or green)
• Baby Gem or Cos lettuce
• 7oz of cooked green beans
• 2 tablespoons of olive oil
• 1 lemon
• Salt and pepper
Method:
1. Quarter the eggs, potato and tomatoes.
2. Combine the tomato, egg, olives, and potato in a large bowl with the lettuce and green beans.
3. Add the olive oil and a squeeze of the lemon to the large bowl with the other ingredients.
4. Season with salt and pepper and serve.
