Recipe: Patatas Bravas

Patatas Bravas is classic Spanish dish which literally means “fierce potatoes.”

As with most tapas dishes, each recipe will vary from each bar or household all believing they have the best.

So try this version of Patatas Bravas with a glass of chilled white wine and see how you get on, remembering that you can add or take away as much paprika and chilli as you want.

Ingredients:
* 3 tbsp olive oil
* 1 small onion , chopped
* 2 garlic cloves , chopped
* 2 pounds of new potatoes
* 5 fresh tomatoes or 1 tin of chopped tomatoes
* 1 tbsp tomato purée
* 2 tsp paprika
* good pinch chilli powder
* pinch sugar
* Salt and pepper
* chopped fresh parsley

Method:

1. Cook the potatoes in salted water and allow to cool.
2. Heat some oil in a pan add the chopped onion and fry for about 5 minutes until softened.
3. Add the garlic, chopped tomatoes, tomato purée, paprika, and chilli powder,
4. Simmer for 10 minutes until pulpy then season with the sugar, salt and pepper.
5. Cut the potatoes into small cubes and place into a frying pan until they are crisp and golden.
6. Add the spicy tomato sauce and taste for seasoning.
7. Finish with a sprinkle of chopped parsley and serve.

    My kids basically subsisted on patatas bravas and pan con tomate while we were in Catalonia last month. Of course, my husband and I were busy subsisting on sangria and gazpacho, so.
