Recipe: Chicken Thighs with Tomatoes, Olives, and Oregano

Chicken thighs are an under-appreciated cut of the bird, and the reasons are fairly clear.

They are a stewing cut, they have a little more fat than the breast, and they aren’t as pretty as white meat.

Yet when treated for what they are, thighs are a truly great cut.

What is the thigh? It’s the lower portion of the leg closest to the body, and it has more meat than the rest of the leg. It also does not have as many tendons, which makes it easier to eat and a lot healthier. Plum tomatoes work best in this preparation, as they hold their shape over a long period of cooking and add texture.

Serves 4

  • 8 chicken thighs, skin on
  • 1 small yellow onion, diced
  • 2 cloves garlic, chopped
  • 6 plum tomatoes, medium to large dice
  • ½ cup white wine
  • 2 tablespoons balsamic vinegar
  • ¼ cup black olives, preferably calamata
  • 2 tablespoons fresh oregano, chopped
  • olive oil
  • salt and pepper to taste

Heat a large, heavy bottomed sauté pan over medium-high heat. Season the chicken thighs with salt and pepper. Add about 3 tablespoons to the pan and sear the chicken until brown on both sides. Remove chicken. Add onion to the pan and cook until soft, about 3 minutes.

Add garlic and cook 30-45 seconds. Add white wine and balsamic vinegar and return chicken to pan. Reduce heat to medium-low, add tomatoes and olives, and cover. Cook for 1-1 ½ hours, or until chicken is very tender. If sauce is very thin, increase heat and cook, uncovered, until sauce thickens slightly. Just prior to serving add oregano and stir.

    That sounds delicious! The thigh is much more economical than the white meat, too…and always moist. I’ll be trying this one…love black olives!
