Tomato-Cucumber and Red Onion Salad with Creamy Tarragon Dressing

The combination of tomatoes and cucumbers is nothing new, so why bother?
Because sometimes a slight change can renew an old favorite.
Tarragon has a wonderful licorice-citrus flavor that isn’t utilized very often in salads, and red onions provide a heat that wakes up the sweetness of the tomatoes and the cooling effect of the cucumbers.
Serves 4
- 3 large vine-ripe tomatoes, cut into wedges
- 2 medium cucumbers, seeded and sliced in half-moons
- 1 red onion, sliced
- ¼ cup mayonnaise
- 4 tablespoons red wine vinegar
- 1 tablespoon sugar
- 4 tablespoons extra virgin olive oil
- 2 tablespoons chopped fresh tarragon
- salt and pepper to taste
In a large bowl, dissolve the sugar with a pinch of salt in the red wine vinegar. Add the mayonnaise and slowly whisk in the olive oil to incorporate. Add the tarragon and adjust the seasoning with salt and pepper if needed. Add the vegetables and toss to coat.
