15-Minute Pre-Tomato-Season Pasta

I had this for lunch today, and it made me feel a teeny bit better about the cold, grey, rainy day (which is great for the plants, I know, I know).

Ingredients

  • 2 tbsp. olive oil
  • 2 large garlic cloves
  • 28 oz. can good-quality whole tomatoes (I like Muir Glen)

    Recipe: White Tomato Sorbet

    With this recipe you can literally make a white tomato sorbet out of red tomatoes.

    There’s no cheating involved either, all you need is a juicer and some tomatoes (obviously).

    Its best used with cherry tomatoes but you can use others if you wanted (it’s just makes it a little pinker). It’s great for those summer dishes and goes extremely well with shellfish like shrimp or crab.

    Recipe: Tomato and Mozzarella Tart

    This is a lovely little dish that goes great for a starter, just simply serve it with a little salad and why not try out different combinations of cheese and garnishes.

    Recipe: Slow Cooked Tomatoes

    A great way to add something to those otherwise boring salads, dressings and sauces or anything else you might think needs a little more taste in it, once again this is another quick and easy recipe that you can prepare at home.

    Ingredients:
    • 3 tbsp extra virgin olive oil
    • sea salt and pepper
    • 3 cloves Garlic, finely sliced
    • 10 basil leaves
    • 4 sprigs Thyme, leaves only
    • 2 Bay leaves
    • 16 plum tomatoes, peeled
    • 1 tsp Sugar

    Method:
    1. Preheat the oven to 260.F and Line a baking tray with foil and drizzle 2 tablespoons of olive oil evenly over.
